1lb Alpha Amylase Enzyme

Alpha amylase is a starch-converting enzyme supplied here as a food grade powder in a one-pound container. It hydrolyzes the internal bonds of starch chains, breaking long-chain carbohydrates down into shorter dextrins and fermentable sugars.

Brewers and distillers use it to thin high-adjunct mashes and to improve starch conversion and yield. In baking it is added to correct low-diastatic flour and improve crumb and browning. It also appears in syrup manufacture and in textile desizing. Enzyme activity falls off outside its working temperature and pH range, so store the powder cool and dry.
