100g Sodium Nitrite Powder

Sodium nitrite is supplied here as food-grade fine, free-flowing crystals in a 100 g pack. It is the active agent in Prague Powder #1 style cures and custom curing blends, used at the low levels set out in USDA and FDA guidance, typically 120–200 ppm in the finished product.

In cured meats it fixes the characteristic pink-red color, protects against Clostridium botulinum and other spoilage organisms, slows lipid oxidation and rancidity, and develops the familiar cured flavor. Common applications include bacon, ham, corned beef, pastrami, jerky, pepperoni and dry-cured salami.
